Many of the most popular Hungarian dishes are also the easiest to nnake - and difficult to ruin. They are worth making in fairly large quantities since they taste even better reheated. The perennial favourite, paprika chicken, is one such dish.
Fry the finely chopped onions, remove from the heat and sprinkle with paprika. Add the chicken cut into portions, sprinkle with salt and add the sliced skinned tomato and green pepper. Cover with a lid and stew over moderate heat, adding a little water from time to time. When the meat is tender, add the flour mixed with the sour cream, bring to the boi and simmer until the gravy thickens to a creamy consistency. Serve accompanied by galuska dumplings
